Steak 'n Shake to cook fries in beef tallow: 'Authentic way'

"We will now be cooked in an authentic way, 100% beef tallow, to achieve the highest quality and best taste," said Chris Ward, Steak 'n Shake's chief supply chain officer in a statement.

They will switch from frying in vegetable oil to frying in "100% all-natural beef tallow."

Local fast-food chain Chick-fil-A introduces modifications to their waffle fries recipe and patrons are taking notice of the change.

"The consumer deserves to get the best, and that's exactly what we're committed to doing," Kristen Briede, the chain's chief global development officer, said in a statement.

The switch to beef tallow will ensure that Shake Shack is delivering the best fries that are possible, she said.

Earlier on Thursday, the official Steak 'n Shake account on X tweeted, "Steak 'n Shake to Use 100% Beef Tallow. No Cap." "No Cap" means "no lie" or "for real."

The chain responded with another post stating, "By the end of February 2025, all locations will use 100% all-natural beef tallow. If veg oil broke your heart, our tallow will make you fall in love again."

Beef tallow is the fat that surrounds a cow's kidney, often harvested during the manufacturing process.

The brand had previously hinted at switching to beef tallow on its X account. Three days before the press release, Steak 'n Shake posted a poll asking, "Cook Fries in 100% Beef Tallow?"

Over 90% of respondents voted "yes," but it's unclear for how long the poll was open.

Steak 'n Shake has 436 locations all across the United States, mostly in the southern and Middle America regions.

The use of partially hydrogenated oils in cooking has sparked a lot of controversy. In October, Robert F. Kennedy Jr. harshly criticized their use in fast-food restaurants and urged a return to using beef tallow.

"Did you know that McDonald's used to cook their fries in beef tallow from 1940 until they stopped using it in 1990? They made this change because it was believed that saturated animal fats were bad for you, but it turns out that vegetable oils are actually a major contributor to the rising obesity rate," Kennedy wrote in an Oct. 21 post.

He stated that obesity rates became significantly higher right around the time that fast-food restaurants switched from using beef tallow to seed oils in their deep fryers.
