After following the Mediterranean diet for over 5 years, here are 11 of my favorite meals

It's been more than five years since I was in college. Since then, I've experimented with many different recipes and even created some of my own.

In the foods I eat, I balance the more pricey items, such as fresh fish and chicken, with whole grains, a mix of beans, and vegetables.

My favorite recipes typically take anywhere from 10 to 30 minutes to prepare and don't demand any special equipment.

I've developed a liking for a salad featuring orange, avocado, and shrimp.

I was initially skeptical that orange, mustard, and shrimp belonged together in a salad. It seemed strange to pass up traditional ingredients like cucumber and tomato in favor of those three.

But the sweetness of the orange really brings out the rich, buttery flavor of the avocado and complements it great with the shrimp.

Combine the orange juice with a splash of olive oil, a teaspoon of whole grain mustard, and a pinch of salt and pepper.

Zucchinis in fritters, served with tzatziki sauce, make for a great lunch option.

Vegetable fritters are one of my go-to snack foods that I really enjoy cooking in bulk and freezing for grab-and-go meals during the busy weekdays.

Grate one zucchini and half an onion into a sieve. Add a small amount of salt and press out the excess water with a spoon.

Then, grate a handful of Parmesan cheese into a bowl with a cup of all-purpose flour, a splash of milk, and one egg. Mix the grated eggplant and batter together.

Add a considerable amount of olive oil to a pan, then fry the small drops of batter until they're golden brown. Use a spatula to press the fritters flat so they're cooked thoroughly throughout.

Combine Greek yogurt, two crushed garlic cloves, a sprig of fresh mint, and a dash of olive oil.

Smoked mackerel paté is an indulgent delicacy

Cured goods, meats smoked, and pâtés.

And a squeeze of freshly squeezed lemon juice.

Season the pâté with salt and pepper and serve it on sourdough toast.

Shakshuka is the ultimate weekend brunch dish.

On the weekend, I go for shakshuka.

Add diced red pepper, green pepper, and onion to a pan and sauté them with minced garlic. Season the mixture with cumin, paprika, coriander, and red chili flakes before adding in some chopped tomatoes.

Put three eggs into the mixture, cover the pan, and let them cook slowly on a low heat setting.

Pull the eggs off the heat as soon as they are cooked to your liking and served with a sprinkle of fresh parsley and mint.

Special occasions call for a lamb souvlaki that I make just for the occasion.

I save it for special occasions.

I'm choosing a high-quality lamb shoulder and letting it sit for a while, marinating it in a mixture made from garlic, oregano, lemon juice, and olive oil.

Add chunks of lamb to a wooden skewer and place them on the grill. I often supplement my kebabs with bell peppers and onions.

End the meal with a serving of tzatziki and Greek potatoes.

Salmon with vegetables is a simple weeknight dinner option.

Season some fish fillets with garlic and herbs and wrap them in aluminum foil. Cook them in the oven for about 15 minutes and serve them with roasted asparagus and broccoli.

I've concocted a Mediterranean version of a make-your-own pizza

If you've got a dinner date scheduled at home, consider making a puff-pastry pizza with your partner.

Remove the premade puff-pastry sheet from the packaging, and on it, spread a layer of pesto and then a layer of tomato paste. Then, place it in the oven and bake for five minutes.

Adding some shredded salmon can provide an extra boost of protein.

Place the dish back in the oven until the cheese begins to tan and soften.

To balance out my lighter meals, I like to whip up a 1-pot creamy chicken pasta dish

Cut up a few pieces of chicken breast into bite-sized pieces and cook them in a pan until they're golden brown, then take them out.

You can put however much you like of the garlic and cream in the pan.

Once the sauce has reached a thicker consistency, sprinkle in some Parmesan cheese, olives, and lemon slices, and then place the cooked chicken back in.

Chorizo and butter bean stew is a comforting meal.

On chilly days, there's nothing like snuggling up with a hearty stew.

Cook in a pan for a few minutes. Turn up the speed of your extractor fan to the highest setting to prevent the smoke alarm from going off - I can tell you that from experience.

Add cans of butter beans and chopped tomatoes to the mix and let everything fry for a bit over medium heat.

Add a generous serving of pesto sauce for an Italian-inspired flavor with a hint of garlic and serve.

I prefer to make a frittata when it's time to declutter the fridge.

Always serve as a fantastic choice.

Combine a few eggs, some sun-dried tomatoes, and crumbled feta cheese.

Chop the onion into fine pieces and sauté it with some crushed garlic for a few minutes. Then add some spinach to the onion mixture and pour an egg mixture on top.

Bake in the oven until the egg is fully cooked, and garnish with fresh parsley and your preferred seasonings.

When I need a bit more protein, I often turn to tofu.

I've only recently discovered tofu, and I've been really into incorporating it into salads and grain bowls to give it a protein kick.

I soak the tofu cubes in a mixture of lemon, garlic, and rosemary overnight and then pan-fry them in olive oil to achieve a crispy exterior.
